I was having a "popeye" moment and just had to try this spinach pie with goat cheese, golden raisins and pine nuts! It was definately time consuming and a little finnicky working with the phyllo sheets but overall a good recipe! I had to put my own spin on it of course and added some mushrooms and basalmic vinegar...I also used 5 packages of frozen spinach (thawed) instead of fresh because it is much cheaper!

Oh yum I would eat that-no raisins though- Plyllo can really be touchy but so light and flaky when using.

Wow, that is a lot of spinach. It looks so yummy but not sure of the raisins.
You make these dishes look so yummy, but every ingredient that is in this dish would not cross my lips under any circumstances! LOL HATE raisins, don't like spinach, goat cheese really???, mushrooms ewwwwww and balsamic vinegar ukkk. I'm sure for those that like these ingredients it was delicious, but I would have cried!
